Hate green leafy vegetables?
Well, that was me an year ago. I used to hate leafy vegetables like Kale and spinach. But i started doing some research about the health benefits of Kale and spinach and realized that they were really good for the health. Kale has a lot of anti oxidants. Well, what are antioxidants and why are they good for your health?
“Antioxidants” is one of those buzzwords that gets thrown around a lot, even though most people don’t fully understand what it means. Antioxidants protect the body from damage caused by harmful molecules called free radicals. "'Free radicals' is a term used for compounds that are highly reactive, which means that they can attach and bind to and ultimately damage normal cells in the body. Antioxidants can lower cholesterol in the body.
I tried eating salads with kale and spinach, but just hated them. I then tried kale smoothie and that was when i fell in love with it. Kale and Spinach smoothie is the tastiest form of consuming the veggies. Not only is it tasty, it is the healthiest form of consuming the veggies, as it would be raw and not cooked. A University of Maryland Medical Center reports that the vitamin C content of foods decreases the longer the item is exposed to light, heat and air. Because of this, kale provide more vitamin C when eaten raw than cooked. Some people find that they digest cooked vegetables better, because the heat softens some of the tougher fiber (making the roughage less rough). But, It’s a myth, that the “live enzymes” in raw vegetables enhance your own digestion. Humans have their own digestive enzymes, which do the job nicely.
Here is the recipe for the Kale & Spinach smoothie :
INGREDIENTS:
1 cup packed kale leaves, stems removed
1 cup packed spinach leaves
juice of 1/2 lemon
1 apple(approx. 1 and 1/4 cup)
1/2 cucumber, diced
1/2 cup filtered water
DIRECTIONS:
Cut the cucumber in quarters lengthwise then slice off the inner corner of each one to remove the seeds. Roughly chop it then add to the blender along with the remaining ingredients.

Blend on high until smooth, transfer to a glass with a straw.
