For millennia, medicinal plants have thrived in various natural areas. Nevertheless, people do not know all the secrets that nature provides. It is not enough to know herbs and its general characteristics, but we also need to know when is the right time to harvest them. Today we will have a look at "Artichoke" (Scientific name: Cynara scolymus), which belongs to the Asteraceae family.
Artichoke is a plant that grows up to 2.5 m in height and has an upright stem along which a groove runs. The leaves are colored green on the upper side and are covered with white hairs. On the upper part of the branches grow bristly heads, called a sheath, and bear purple flowers.
The plant blooms from July to August, especially in gardens. It is best to collect artichokes when they are soft and beautifully green. To be stored in a cold place, it must be wrapped in foil as it may otherwise lose some water.
Active substances: vitamin A, cinarin, flavonoids, phenolic acid (vitamin B9), potassium salts, zinc, iron and enzymes.
Artichoke leaves are used to treat jaundice as it speeds up the excretion of bile, helps the digestive tract and improves the function of the liver, which more readily processes the toxins found in the body. The plant also helps with vascular cleansing, lowers cholesterol, helps renew cells in the liver, accelerates water secretion and improves kidney function. It also has a beneficial effect on diabetics as it lowers sugar levels and low in calories.

We can make a boil out of the leaves we are chopping by inserting a spoonful of the leaves into the pot and pouring them over with cold water. Set the crucible over fire, wait until boiling and allow to simmer for about half an hour. We can enjoy up to 3 glasses a day. For culinary diversification, smaller heads of the plant can be prepared without slicing them, while larger ones can be in boiling water for about 30 minutes until the leaves can be easily removed.

The plant is not suitable for nursing mothers and patients with gallstones. In case of any allergic effect, we cease consuming this plant immediately.
