Just taking a walk down the road when I spotted
this great fruit called tiger nut it can also be called chufa sedge , nut grass , yellow nutsedge, tiger nut sedge , or earth almond ) but scientifically, it is called Cyperus esculentus . It is mostly popular in Spain, North Africa and other African countries like Nigeria. In fact,In Nigeria, it Is called Aya by the Hausa's while it's processed milk is called KUNU AYA. it's health benefits cannot be under estimated because a lots of Nigerians now use it in diverse numbers of ways such as milk production, flour production and even catering foods.
It can be chew raw either dried or wet. I have come to discover that in processing it into various forms nothing is wasted not even the chaff interesting isn't?
