Secondly, let me explain better. We start from the fact that proteins, carbohydrates and fats use different enzymes for digestion. This means that when we eat food from different groups, digestion slows down, eventually leads to digestive problems.
For example, to digest carbohydrates (bread, potatoes, pasta, etc.), the body produces enzymes and alkaline juices to digest them. To digest proteins (meat, mushrooms, etc.) the body produces enzymes and acidic juices.
What happens if we eat them together? Nothing good! Because when the acid juice meets the alkaline is neutralized, and the digestion is not produce anymore. The foods get rotten, or it is necessary for the body to bring and consume much more energy for this digestion process. Also, digestion takes much longer. Those non-digestible foods turn into toxins that the body needs to make an effort to eliminate them. And, of course, because of this process we feel tired.
Instead, if we combine food properly, digestion is much easier with minimal energy consumption. Thus, the body nourishes and extracts the nutrients and energy it needs.
This does not mean that you can not eat meat and potatoes, but just do not eat them combined in the same meal. We can replace potatoes with a salad!
With regard to carbohydrates, they are of two types: simple and complex. Not all are good for the body, thats why you are confused.
Simple carbohydrates are found in milk, fruits and refined sugar, and those complexed in vegetables, brown rice, whole grains.
Some of the foods that contain simple carbohydrates (candies, cakes, bread, cereals rich in sugar, etc.) should be avoided because they provide short energy intake and increase weight gain.
Complex carbohydrates are good for the body because they have the great quality of absorption much slower than simple ones and provide a constant energy throughout the day, prevent sudden increases and decreases in blood sugar and gives a long satiety.
Try not to combine milk with any food, otherwise it will slow down digestion. Nutritionists recommend eating simple dairy products without cereal grains rich in sugar.
