Molokheya was actually an ancient Egyptian staple eaten only by kings, nobles and pharaohs. It is a green soup made from a dark leafy green plant that looks similar to spinach but tastes very different.
but tastes very different. The dish is considered a national dish, right up there with ful medammes and koshary.
In Egypt, it’s made into a stew using broth flavored with lots of fresh garlic, coriander, bay leaves, and cardamom. The broth is made by boiling chicken, duck, rabbit or in beach side towns like Alexandria – prawns. The soup/stew is enjoyed either with rice or toasted bread.
It has a nutritional profile that is very impressive;“rich in
