Recipe for Grilled Sirloin Steak à la Gascogne
Ingredients
- 1 piece of sirloin steak (4 cm thick)
- Appropriate amount of olive oil
- Appropriate amount of black pepper
- Appropriate amount of sea salt
- A small piece of butter
- 2 sprigs of rosemary
- Appropriate amount of cherry tomatoes
Since I like thick steaks, this time I'm making a 4 - cm - thick Angus sirloin grilled steak. Here is how to make thick - cut Angus sirloin steak at home.
Step 1
Show you the stock in my fridge. 👀
Step 2
Thaw the steak at room temperature. After it is completely thawed, use kitchen paper to absorb the blood water (make sure to do this several times‼️). Then, smear olive oil on both sides and sprinkle with sea salt and black pepper, and marinate for 3 minutes.
Step 3
I use a cast - iron pan to grill the steak. It's much better than an ordinary pan and makes the steak more fragrant.
Step 4
Preheat the cast - iron pan over low heat for 2 minutes, then turn to high heat to heat the pan up (the pan must be very hot before putting the steak in‼️ High - temperature grilling makes the steak fragrant).
Before putting the steak in, add some olive oil to lubricate the pan. You can cut off the excess beef fat from the steak and render it in the pan to enhance the flavor.
Grill one side of the steak until it's slightly charred before flipping it. Since the pan is heated to a high temperature over high heat, it's normal for there to be fumes. Remember to turn on the range hood to its maximum setting‼️
After both sides are charred and crispy, grill the four sides to seal the edges. Add butter, rosemary, and garlic according to your taste and continue grilling to add flavor layers (Don't be afraid of over - charring and flip the steak too frequently. The charred taste is really great!).
The whole grilling process takes about 6 minutes.
Step 5
After taking the steak out of the pan, don't cut it immediately‼️ Let it rest for 2 minutes without moving. Because the residual heat will continue to cook the inner part of the steak.
⭕️ I prefer my steak medium - rare. If you like it more well - done, you can either extend the grilling time or the resting time. You can also put the steak in an oven preheated to 180°C for about 3 - 5 minutes before cutting it.
Step 6
Use the remaining oil in the pan to slightly grill some cherry tomatoes. It looks great when served on the plate!! The grilled cherry tomatoes also taste delicious (because the pan has the aroma of beef fat and butter).
Step 7
The steak is charred on the outside and tender on the inside, with a perfect taste.
