It's late August and the UK has been back to normal weather wise for the last two weeks. There has been fine days but mostly overcast, drizzling with the occasional heavy rain. Bunty's blog has all the tips and things we've been doing but the weather hasn't stopped the tomato's inside the polytunnel producing like crazy which has meant processing tomato sauces like crazy!!

Also as you can see we have been processing courgettes by making soup and freezing it for winter consumption. It's a simple recipe but lovely. One onion sweated in butter, add large quantity of cut courgette. Sweat down for 20 mins add veggie stock (water quantity for consistency) and large handful of basil leaves. Blend with hand whisk and season - aaahhhh the taste of summer.

Meanwhile in the evenings I've been editing a long event film about the Freestyle in Fuerteventura. This is the first time since 2010 I've made such a film and things have come on a lot since then. This film tells a story of when 40 of the best freestyling windsurfers got together in Fuerteventura and thrashed out an intense competition in super high wind conditions. It is extremely difficult to even sail in these type of conditions let alone try spins, flips and tricks!!

It is yummy @akkypan tomato sauce is easy - bit of onion, garlic lightly fried then add skinned tomatoes and reduce for 1 hour!! Were cooking up a batch for the freezer every 2 days at the moment :)
