Peach and Raspberry Parfaits

Layer fresh fruit, billowy whipped topping and melt-in-your-mouth shortbread cookies in see-through glasses to make these quick and easy desserts.
Ingredients
2 medium-size peaches, rinsed and pitted
1 raspberries, rinsed and gently patted dry
2 teaspoons sugar
1/2 teaspoon vanilla extract
1 dry whipped topping mix (such as Dream Whip)
1/2 cup 2% milk
1 (6 ounces) vanilla yogurt
8 shortbread cookies (such as Lorna Doone)
Mint, to garnish (optional)
