Fruits & Veggies Monday/Gobi manchurian (Cauliflower on Indian)🥬 🥦 🍅 🥕 🌶
Hello dear fruitsandveggiesfriends!
Today I have a delicious, Indian dish for you especially for friends of spicy cuisine 🤪
Manchurian is a very popular Indian dish that is cooked in Chinese style. It's basically fried cauliflower wrapped in pastry which is served in a thick sauce. It is usually served as a starter, but it can also be served as a main course with rice or Indian bread.
It is said that this dish was developed by a group of Chinese in eastern Kolkata (Kolkata) not long ago. During and after the Chinese Cultural Revolution under Mao Tse Tung, many Chinese succeeded in fleeing to India and establishing a new existence as a restaurant operator there. They developed a new fusion kitchen that quickly conquered India. "Gobi Manchurian" can be found today on almost every Indian menu.
Ingredients for 3-4 servings:
- 1 medium cauliflower
- Handful of spring onion green
- 1 pitted red chili
- 4-5 cloves of garlic
- Piece of ginger
- 1 tsp black mustard seeds
- 7-8 teaspoons rice flour or cornstarch
- 5 teaspoons wheat flour
- 1 red onion
- Chili sauce depending on the spicy you want
- 3-4 tablespoons tamari soy sauce
- Pepper to taste
- Salt to taste
- 1 tsp paprika powder
- 1 teaspoon cumin
- about 1/2 cup water
- oil
Preperation:
Cut cauliflower into florets and cook for about 2 minutes in salted water. Remove the cauliflower from the water and drain on a paper towel.
Mix 3 tablespoons of flour with 3 tablespoons of rice flour or cornstarch, salt and pepper. Add water gradually until a thick dough is formed.
Add the pre-cooked cauliflower to the flour-water mixture and cover completely with the dough. Then add 1 tablespoon of flour to the cauliflower and mix well.
Heat the oil in a pan and carefully add the cauliflower. When the cauliflower is golden yellow, remove from the pan and drain on a paper towel.
Heat 3 tablespoons of oil in a wok, sauté the cumin, garlic, red chilli, red onion and mustard seeds for about 5 minutes. Add spring onion green and finely grated ginger and fry for another 5 minutes. Add chilli powder and soy sauce and fry briefly.
Add the tomato paste and stir, add about 1/2 cup of water. Mix 1 tablespoon of cornstarch with a little water and tie the sauce with it. Season with salt and pepper. Add the cauliflower to the sauce and stir well.
Serve the cauliflower with green onion and rice 🌶
