Vegetable quiche 🥕
A quiche is a specialty of French cuisine, originally from the Lorraine region. It is a hearty short pastry baked in a round, flat form with a spicy filling or topping,
So actually quiche is just a fancy name for flan, or maybe the dough has to be different? I don't know, but it helps, a simple everyday meal immediately becomes a little more luxurious.
This quiche together with salad makes the perfect meal. It also looks great on a buffet, warm or cold. The smoked tofu and the many herbs give the whole thing that certain something.
I'm having a hard time writing a story about the recipe right now. But maybe you don't feel like reading a lot and starting with the recipe right away.

Ingredients for the dough
- 160 g spelled flour
- 80 g almond butter
- 75 ml cashew milk
- Salz und Pfeffer (optional)
Ingredients for the filling
- 4 potatoes
- 1 red onion
- 1 carrot
- 3 celery sticks
- 6 broccoli florets
- salt
- pepper
Of course, you can also use any other vegetable as you wish.
Ingredients for the topping
- 3 tbsp chickpea flour
- 200 g smoked tofu
- parsley
- Dille
- Marjoram or which herbs you would like to have
- salt and pepper
- Cashew milk, the amount depends on the consistency of the tofu
Preparation of dough
Knead the spelled flour, almond butter, solt, pepper and cashew milk into a dough.
Grease the bottom of a springform pan Ø 24 cm Put the dough into the mold and press it flat, forming a small border.
Cut the potatoes and carrots into thin slices and the celery into small pieces., chop the onion finely, cut the broccoli into small florets.
Now top the dough with the potatoes, onions, carrots, celery and finally with the broccoli.
For the topping, puree the tofu finely, stir in the chickpea flour and so much cashew milk until the mixture is viscous, add the finely chopped herbs and season with salt and pepper.
Empty the tofu mass over the vegetables and smooth out.
Bake the quiche at 170 ° C for about 25-30 minutes. Sprinkle the quiche with chopped parsley and celery leaves and serve.

Looks delicious! I tried making a chickpea flour quiche a few years ago and it was just so so. This looks so much tastier. I bet it would be perfect for Easter or Mother's Day!
