Friday Foodies from @farida's kitchen by @maryfavour and redfishpillar. It's my special pounded and vegetable soup delicacy!!!
It was fun today as I led the team in my school for a food and nutrition show. We were team S. S. 2 and 5 dishes were in display from different teams. Without doubt, my table was the best and so was my meal even though the parents on ground didn't want to pronounce me the winner because they wanted to encourage the other classes i. e the junior classes.
Ingredients
Yam for pounded yam
Palm oil
Iru
Meat
Ice fish
Stock fish
Chilli pepper
Pumpkin leaves
Water leaves
Stock cubes
Kpomo
Crayfish
Salt and
Onions for soup
Orange
Pineapple and
Coconut
For juice
Procedure
Pounded yam:
Boil yam and pound until it is smooth for consumption.
Vegetable soup:
Boil the seasoned meat with onions, stock cubes and salt until it is tender. Add stock fish and ice fish and leave for about 10minutes. Add palm oil, cubed Kpomo, iru, pepper and crayfish. Add vegetables and a little salt to taste. Leave for 3minutes.
Juice:
Wash and grate pineapple and coconut, squeeze out the juice. Squeeze out orange juice and mix with the previous two.
Add some ice cubes to make it a bit chilled because of the hot weather.
