French macarons- first attempt

I have been obsessed with macarons for the last few years. But when they are quite expensive, it kind of starts taking a toll on the wallet so I decided to bake them myself!

They are delicious but I have to work on the shape 😉

Here is the recipe:
3/4 cup almond flour (ground almonds)
1 cup icing sugar
2 large egg whites, at room temperature
1/4 cup caster sugar
1/2 teaspoon pure vanilla extract or any other flavor

Method:

Combine almond flour and icing sugar in a bowl and whisk together. Pass mixture through a fine-mesh sieve. In a large bowl, beat the egg whites on medium speed for 2 minutes until soft peaks form. Add the caster sugar and beat on high speed for 2 more minutes until stiff, glossy peaks form. Add vanilla extract and beat for another 30 seconds.
Gently fold in dry ingredients until mixture is smooth and shiny, (with no visible dry ingredients) and begins to run a little but not too runny.Make sure you do not overfold.

Line 2 baking sheets with baking paper and pipe batter into round circles, few centimeters away one from another.
Tap the baking sheet firmly against the counter to release any air bubbles.
Let stand at room temperature for 30 minutes until they form a skin.
Preheat oven to 160 degrees.

Bake for 10-12 minutes. Let cool for 5 minutes then transfer to wire rack and let cool completely.

I remember my first time baking macarons... they did not turn out very well. Definitely not an easy thing to bake, but yours are shaped so nicely!
