Pork Spare RIBS, TAKE 2.1 (da pix!)
Left you with "the plan"... now here is the execution of it. Here is the whole thing, with a "known object" for size reference ;)

I then cut these ribs into 3 slabs, in an attempt to get it into an average sized crock-pot! I also placed my dry rub mixture on both sides, but only put the ground red pepper on the largest portion. It's about 40% of the total meat, because I am sharing with mum and pops. Pop MIGHT get one of the spicy ribs ;) lol
Here's my dry rub combo, I do not have a single mixture that I buy, I am just winging it and using what I have. It was very tasty on the last try, so I used it again except the biggest chunk got some HEAT ;)
Last time came out very good with these same dry rubs, (less red pepper) but my sauce was applied when the ribs were nearly fully cooked. My mistake was I did not drain any of the juices and fat. It thinned out the sauce too much and it did not stick on the ribs the way most folks like to eat it. So I am going to actually heat the sauce separately in a pan and make it "dipping style" plus have hot sauce on the side. We have some places around here that serve it that way and it's really good. Properly seasoned and cooked ribs with dry rub can be eaten "Sans Sauce", pardon my French! lol

I put the biggest piece on bottom, with the red pepper rub, so it would not get the top pieces spicy hot by dripping down. Then the smallest piece nested in that so the bottom might pick up some "heat" but not much, I put the hot stuff on first and the garlic powder, Cajun and Tajin afterwards. It should mostly soak into the meat. Now the crock-pot is set on low and I'm giving it at least 12 hours. You can tell when it's done, the meat separates from the bone and has shrunken substantially. The last attempt was obviously properly cooked, very moist and yummy, I just screwed up the sauce application. Don't get me wrong it was great meat, I was just disappointed with my sauce.
