Winter's Sustenance - Blue Hubbard Squash
Look at this beautiful giant squash! It weighs more than 30 lbs. This wonderful Blue Hubbard grows very easily here in east Washington and provides us with a lot of nutrition this winter. It tastes very mild, almost like a butternut squash. But unlike butternut, which is better to grow in warmer climates, Hubbards are excellent for cold climates and has a long storage life. According to Slow Food, "1/2 cup provides 100% of the recommended daily intake of beta carotene, potassium, iron, zinc, protein, vitamin C, and many B-vitamins."
Roasted squash, squash pie, squash soup, squash curry, and creamy squash pasta are just some of the ways we've enjoyed this versatile vegetable.
What are some of your favorite winter foods?

That's a pretty awesome squash! How many meals can you get out of 30 pound squash?
It takes an axe to cut it open lol! Some the weight are from the rinds and innards as well. It depends on what you make, but I'd say about 4-6 meals for 2. We like to cook about half of one to bring to potlucks because it definitely can feed a crowd!
wow its look beautiful .its help our healthy body . thank you to your steem post.
Thanks so much. Yes, indeed it is good for our health :).
That is a massive Squash!
Shepherd's pie is probably my favorite winter food : )
My mouth watered when I read 'squash pie'. The other suggestions are equally delicious.
It was tasty! Might be time to make another soon :).
YUM yum. We lost most of our squash to fungi and squash bugs. Could have difinitely dug into This Hubbard for a few meals.Only a Few butternut volunteers from the compost yielded for us. Our favorite winter fare has been sweet potatoes , especially love the Japanese purple variety we grew.
Aww that's too bad about the fungi. I don't know if you already know this, but I just learned recently that fava beans is a great controller of fungus. Perhaps try interplanting them with your squash? Oh man sweet potatoes! I love those purple sweet potatoes. If I had to pick between squash and sweet potatoes, I'd probably choose the latter haha.
