Pork is the culinary name for the meat of a domestic pig. It is the most commonly consumed meat worldwide, with evidence of pig husbandry dating back to 5000 BC. Pork is eaten both freshly cooked and preserved. Curing extends the shelf life of the pork products.

My friend Ricmar sells his pork with partner Tere & Karen in a local meat market in Bacoor Cavite. They wake up at 4 in the morning for the fresh pork delivery from the slaughterhouse and will be selling them until lunchtime. Left overs will be kept on the refrigerator but will also be sold again the following day.

Best pork part to eat is the fillet or tenderloin. It is a long thin muscle, found on the inside of the ribcage and is a part of the loin cut. It can be cooked whole, cut into small round medallions and pan-fried, or cut into 1cm slices and bashed into thin escalopes. Pork fillet is the leanest of all cuts, so it's the healthiest choice.
The loin roast is a larger cut of the loin than the tenderloin (which usually weighs about a pound). Bone-in, it's at its juiciest and most flavorful, but cooking time will be longer, and the bone can make carving a bit challenging.

In general, red meats (beef, pork and lamb) have more saturated (bad) fat than chicken, fish and vegetable proteins such as beans. Saturated and trans fats can raise your blood cholesterol and make heart disease worse. So be very careful in eating too much pork.
