Cheesy keto naan bread
I decided recently to venture out of my food comfort zone and start making dishes or baking food that I've never made before. I started doing keto last year during quarantine and have continued on that path into the new year. One of the biggest struggles in doing keto is finding a bread replacement. I know many say you have to get rid of carbs like that and that is true. However, there is not much satiation from a lettuce wrap.
So I started doing some research and came across a recipe for making Keto naan bread. The recipe they use calls for use of mozzarella cheese, but I made a substation of cheddar cheese. The ingredients are as follows:
2 large eggs
1 1/2 cups of almond flour (low carb comp to regular flour)
3-4 cups of cheddar cheese (shredded)
1 tablespoon of gluten free baking powder
2 1/2 tablespoons of whole milk greek yogurt
First thing you would do is preheat your oven to 375 degrees Fahrenheit, as shown below:
Next you are going to mix in a microwave safe bowl your cheddar cheese and your yogurt. You want to mix it up really well and then heat for 2 - 2.5 minutes. You will want to stir the mixture every 30 seconds to make sure the two ingredients are melding together and to insure that the cheese will not stick to the sides of the bowl.
In a separate bowl, you will want to mix your baking powder, your almond flour and your eggs. Using a whisk is your best bet. If you do not have a whisk, a fork or your hands will be sufficient.
Once your cheese and yogurt mixture is heated, you will want to make sure you pour it into your mixture of flour, baking powder and eggs. You will want to pour it in hot and get to mixing the two mixes as fast as you can so the cheese doesn't harden before the two are fully formed into one.
Once you have your "dough", put it in the refrigerator and let cool for approximately 15-20 minutes. It might take more time. It could also take a little less. The main thing you are going for is to see if the dough will stick to your fingers when rolling it out.
If the consistency and temp of your dough is good to go, then its time to start rolling the dough into form. As you can see below, this mixture will make approximately 6 -7 naan breads.
After your oven has preheated, place your naan bread on parchment paper (spray the paper with a non-stick application to make sure the bread will not stick to the paper. You will then heat the cheesy naan bread for approximately 11-13 minutes.
After you have heated the bread, take them out and then brush on a mixture of garlic powder, butter and parsley. I suggest using roughly two ounces of butter, and a tablespoon of garlic and parsley, each.
After you brush on the garlic butter, put back in the oven for another two minutes. Naan bread should turn a golden color. After two minutes, take out and let sit for approximately 5-10 minutes. Then serve!
Absolutely delicious.

Oh man you just gave me a craving for Ecuadorian Yuca Cheese Bread. Man they would have these little gas ovens right on the side of the road and sell it hot and fresh for 25 cents each. So good! Probably not Keto though, but maybe almost. One thing for sure is they were really good.
I tried Keto for a few months, didn't work for me. Found myself extremely low energy and struggling to find food to eat. But I hear some people do exceptionally well on it.
These last few weeks I've come down to the Islands in Thailand, and I am doing the 21day reboot! I found this program on line somewhere, I think a google search will bring it right up if you're interested.
