新鲜荷叶制作糯米鸡的方法

鸡腿肉100g、新鲜荷叶4张

制作辅料:

豌豆50g、糯米300g、干香菇2朵、冬笋50g、广味香肠1根、肉松50g

制作调料:

生抽15ml、盐5g、绍酒15ml、甜辣酱30g

做法:

1、鸡腿肉洗净擦干水分,切成2cm见方的小块,再调入生抽和绍酒腌制15分钟。

2、干香菇用热水泡发,同冬笋和广味香肠一起切成1cm见方的小丁。

3、糯米提前浸泡2-3小时,再放入锅中蒸熟,随后盛出并将米粒打散。

4、在糯米中放入豌豆、香菇小丁、广味香肠小丁、冬笋小丁、鸡肉块和盐搅拌均匀。

5、将新鲜荷叶刷洗干净,背面向上,取适量糯米鸡肉馅料放在中间,先将底端向上折叠包住糯米,接着将左右两端的荷叶向内折叠,然后把上端的荷叶向下折叠将整个糯米包裹住,最后用丝线扎紧,使其成为枕头状。

6、将包裹好的糯米鸡放入蒸锅中,大火蒸制30分钟。

7、最后将荷叶打开,在糯米鸡上淋入甜辣酱,撒入肉松即可。

荷叶糯米鸡的由来

很久以前,泮塘(即现荔湾湖公园附近)一带有一个鸡贩,每天穿街过巷卖鸡。有一天,他打算把卖剩下的一只鸡拿回家蒸给家人吃。他正想把准备好的鸡放到碟子里时,手一滑,把碟子打碎了。

因为当时人们都很穷,家里的碟子就只有一个,打碎了又不能马上就买得到,怎么办呢?于是鸡贩就把切好的鸡块放到饭锅里,和饭一起蒸熟。当他吃饭时却发觉很好吃。于是他灵机一动,每天晚上都做这种滑鸡蒸饭当夜宵卖。

结果非常受欢迎。有食客向他提议,如果把做饭的粘米改成糯米,会更加可口。于是糯米鸡就诞生了。泮塘附近的酒楼也争相模仿,而且泮塘盛产荷叶,于是厨师们就用荷叶包裹饭团,里面再加上冬菇、虾米、咸蛋等各种配料,就演变成了今天的广州美食了。
