CELERY AND FETA SALAD

INGREDIENTS

  • 200 g (7 oz) feta cheese, thinly sliced (see note)
  • 3 celery stalks, minced
  • 1 Asian pear, seeded and diced
  • 40 g (1/4 cup) dried apricots, diced
  • 35 g (1/4 cup) roasted and crushed pistachios
  • 30 ml (2 tablespoons) of olive oil
  • 15 ml (1 tablespoon) white wine vinegar
  • 15 ml (1 tablespoon) lemon juice
  • 0.5 ml (1/8 teaspoon) bird pepper, seeded and chopped

PREPARATION

  • In a large plate, spread the feta cheese in a thin layer.
  • In a bowl, mix remaining ingredients. Salt lightly and pepper. Spread over the feta and serve.
