
INGREDIENTS
- 200 g (7 oz) feta cheese, thinly sliced (see note)
- 3 celery stalks, minced
- 1 Asian pear, seeded and diced
- 40 g (1/4 cup) dried apricots, diced
- 35 g (1/4 cup) roasted and crushed pistachios
- 30 ml (2 tablespoons) of olive oil
- 15 ml (1 tablespoon) white wine vinegar
- 15 ml (1 tablespoon) lemon juice
- 0.5 ml (1/8 teaspoon) bird pepper, seeded and chopped
PREPARATION
- In a large plate, spread the feta cheese in a thin layer.
- In a bowl, mix remaining ingredients. Salt lightly and pepper. Spread over the feta and serve.
