Whole Mind Cooking: Create a Tasty Indian Masala Soup
Looking for some cold weather meal inspiration? This soup will keep you warm and satisfied for hours!

Servings: 4-6

Ingredients:
4 cups broth (vegetable or bone)
1/2 cup coconut milk
1/2 diced onion
1 tablespoon curry powder
1/2 tablespoon garam masala
2 teaspoons cumin
2 teaspoons of ground coriander
1/2 lemon
1 large chopped sweet potato
1 large chopped yellow squash
1 cup chopped snap peas
2 heaped tablespoons of tomato paste
salt
pepper
Steps:
Over medium-low heat, add broth to pot with coconut milk, diced onion, curry powder, garam masala, cumin, ground coriander and salt and pepper to taste
Mix well, adding in juice of 1/2 lemon, sweet potato, yellow squash, snap peas and tomato paste
Bring to boil, then cook over low heat for 20 minutes
Serve as is or blended with fresh cilantro and a squeeze of lemon juice
