Ratatouille

Ingredients:

  • 2 tablespoons of olive oil
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 1 large eggplant, diced
  • 2 zucchini, diced
  • 2 large bell peppers, diced
  • 2 tomatoes, diced
  • 2 tablespoons of fresh basil, chopped
  • 1 tablespoon of oregano
  • Salt and pepper, to taste

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the eggplant, zucchini, bell peppers, and tomatoes and cook for 10 minutes, stirring occasionally.
  4. Add the basil, oregano, salt, and pepper and cook for an additional 5 minutes.
  5. Serve warm. Enjoy!
