Poulet aux Morilles

Ingredients

  • 4 chicken breasts
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 shallot, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup dry white wine
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 pound fresh morel mushrooms, cleaned and sliced
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat the butter and olive oil in a large skillet over medium-high heat.

  2. Add the chicken breasts and cook until golden brown, about 8 minutes per side.

  3. Remove the chicken from the pan and set aside.

  4. Add the shallot, garlic, chicken broth, wine, thyme, and pepper to the skillet. Bring to a boil and reduce heat to low. Simmer for 10 minutes.

  5. Add the mushrooms and cook for 5 minutes.

  6. Return the chicken to the pan and simmer for 10 minutes, or until the chicken is cooked through.

  7. Sprinkle the parsley over the top and serve.
