Kimchi pancakes?! That sounds like delicious sorcery. I have had savory waffles but not pancakes! Did you make them yourself or did you get them somewhere? I would imagine the cabbage needed to be wilted a bit to keep the dough from getting too soggy while baking. I am really intrigued!!

But yes, eat more veggie-packed baked goods!

I got them from Cook St. Paul!! They were really good, but my best friend has the recipe and technique on lockdown. (The secret is seltzer water added to the batter to add the crispiness) LOL She and I plan dinner nights where we both bust our buns in the kitchen and cook Korean goodies together for close friends and family. :)

Kimchi pajeon, gamjajeon, beef bulgogi, and a vegetarian dumpling soup. :D

I need all of this in my life, pronto. Thanks for the small hint for the heavily-guarded pancake recipe, I will have to try it out soon. It's been too long since I had bulgogi and that dumpling soup looks delicious so I think I have a couple of meal ideas just from this comment! Thanks so much for responding, my partner can verify that my mind was blown, in the best way, and I needed to know more! haha

I will definitely share with you the entire recipe and have my bestie write it down! We always share recipes with people so more people can enjoy them! :D The seltzer water was the only secret I can remember at that time. I think she said something about mixing half tempura flour and some other flour to make it even crispier. So there is that, too! <3<3

You two are freaking dolls. Stay awesome
