Bigpchef Goes Restaurant Hunting

This was the garlic lovers pizza. Had all sorts of meat and a garlic sauce base. So freaking delicious.

Time for the Bidness

I am finally setting out on a venture to own my very own restaurant. I did open up http://theamericanjoint.com/ in Mumbai, India and we are running strong with three locations, but it is not my own. I have three other business partners involved in the restaurant as well.

This time I would like to be the whole and soul responsible party for it's success. If it fails, it's on me. If it runs, well than the profits are on me...all 100% of them. Weeeeeee!!

What

So there are a few ideas I have that I want to implement. And I will be approaching this in a couple of different ways.

Concepts

  • Pizza place - with various types of crust - i.e. deep dish, hand tossed, stuffed, NY Style, Connecticut style - sort of a one stop pizza mecca
  • Burgers & chicken sandwiches - exactly how it sounds, but just superbly delicious burgers and chicken sandwiches - different sauces, batters, fries, etc...

Looking For

  • Asset sale - basically a restaurant that has closed down and is selling their equipment - I would pay for the equipment and take over a lease
  • Existing pizza or burger place - as in find a place that is for sale, AND already has a good cash flow (net profit)

Where

This is a bit of a tough one because my search radius is so large. But it would basically be the Bay area, and surrounding vicinity. Including as far North as Sacramento and as far south as Santa Cruz.

1st Up

The very first place I looked at was an Indian pizza place. Unfortunately I cannot disclose much information as I have signed numerous NDAs (non-disclosure agreements). But I can provide you with some yummy ass photos.

This was the butter chicken pizza. Pretty good, but the butter chicken sauce was not enough. They should have put a little more.

This was the palak paneer pizza (spinach sauce and cheese) - this was also pretty good, but none of Indian pizzas were as good as the garlic lovers pizza.

Verdict

While this place had some decent pizza, especially the non-Indian ones, I will be most likely passing on it.

The place was not kept up well and lots of items were broken down. Also, they are closed both Monday AND Tuesday. As a result, there is no way I could get an accurate representation of their cash flow.

On Going

Stay with me as set out on a venture of finding something I would like to run. I will keep you guys updated with the happenings.

Before you embark on this venture may I suggest coming to Chicago and sampling some of the deep dish Chicago style pizzas. If you haven’t done so already it would be advised from the Dawg. As an Italian I can't even fathom how anyone could call that a pizza! I'm sure it's delicious, but that's more of a pie 😉

Ha!! Actually I was born in Chicago. I love their food scene. I was thinking of adding a Chicago deep dish as well. And yeah, they don't do it all too well out here in the Bay.

Man, I want a food truck so bad. But sadly this area is saturated with it. And to operate in different areas I would have to get multiple licenses. Another major issue is, food trucks must be latched to a commissary kitchen. The kitchens are fully booked...only timings open are over night hours. But I won't let the food truck idea die. I want to open up one from my own kitchen once I find a restaurant.

Dayum, chef! How much did you smoke before you hit up that pizza place!?

Lol, just a little over an 1/8th. After all, this was for research purposes. So I did it in the name of science???

Cant wait to read more about This, AS i have considered doing the same in Morocco, seeing as I already know how to make a proper pizza from Norway. But I’m a little in the blue when it comes to all the extra things I need to find out, and ofcourse looking at eventual locations!

I like your attempt. Me and Vivi are dreaming about neat bistro om some tropical island. Well after few years when some SBD came ^^ We found the best pizza in Napoli, Italy we also wrote about it. One day I will try those US style. Maybe in your pizza place. Good luck

Oh wow!! Yes, that would be a great idea here in the states. Nothing like true Italian pizza. HA! My ultimate dream is along those lines as well. Eventually I want to open up a Jamaican place with family style seating and dishes...on the beach of course.

Getting one personal business is a good thing and it gives one freedom in taking decisions without informing the other partners. I trust you have gotten just the right place for it. I love Pizza too. Good luck with your planned business

Hard to disagree.

That looks really good. I used to get a Chicago style stuffed deep dish pizza from Papa Murphys, it's a take n bake place so you pick out your pizza, they make it and they provide cooking instructions and you take it home and cook it. They were huge and so delicious. Two slices and I'd be full, but I'd eat just that for a few days straight.

HOLY HELL!!! Papa Murhpy's has deep dish?? I never knew that. I never even bothered to walk into that place cause I figured it would be no different than buying a frozen pizza at store and baking it at home. But if you say it's yum, I may have to give it a try.

If there's one near you, find a coupon and give it a try. I haven't had it in over 10 years because there aren't any around me but it was something I'd get all the time when I lived up in Washington state.

Good luck BigP. I was in the restaurant business for a little over 20 years and it was hard, hard work. But if it is what you love to do I wouldn't discourage you from going for it. There is a certain satisfaction you get from being your own boss. I had plenty of good times, but eventually the grind got to me.

Yes, sir I agree. It's not an easy business to get into. But I do love cooking for other people and seeing them happy and full. I am too worried about the grind, that is why I wan't to start small and stay small. Not looking for millions. Just enough to fund my weed habit and buy a house out here. Thanks for the encouragement.

I'm not sure you could buy a house and weed without millions where you are. ;)
