How to Make - by Barry Lewis:

This mug pizza recipe was emailed in to the website for me to try and was a really fun project to experiment with and best of all, it was ready in 2 minutes. This of course can vary depending by the power of your microwave, but it is a really cool thing and actually tastes pretty good. The base is probably more cakey or doughy than a standard pizza base of course, but hey, lets not complain here, I was sceptical at first, but it works well!

My microwave being used for reference was an 800watt one, if yours is higher wattage it will likely take less time to cook. And remember, there’s no need to pre-heat your microwave cause mine was cooked on high power.

First up into a microwave safe mug spoon in the flour, baking powder, soda and salt. Mix through to combine as one dry mixture. Then add in the milk and the oil, stir until you get a wet dough like mixture that is thickened up.

Be sure to scoop all the flour from the bottom of the mug to blend it into the dough.

Once it’s settled and even on the bottom of the mug spoon over the pizza sauce, this can be a ketchup if you prefer – a bbq one would be amazing! Spread it so it evenly covers the dough mixture.

Next up pile on the cheese and then stick the mushrooms / chorizo slices on top and finish with a sprinkle of basil.

You could use other pre-cooked meats or toppings to your liking.

Place in the microwave for 2 minutes (or adjust depending upon your microwave power) you are looking for the cheese to be bubbly all over, the mixture to have risen slightly and some of the sauce to be bubbling through. Sitting it on a saucer (also microwave proof) will help catch any drips! It’s hard to tell what is happening in the mug so be sure to feel comfortable the dough has been cooked enough before removing.

I would say anything less than 90 seconds is a no go. Even if it bubbles up, open the microwave door for a few seconds, then cook again.
