Dankalicious Quick Chicken Salad Recipe
I am a little...totally obsessed with food. Real, pure, nutritious and DEE-licious food.
I was planning to write this article, and that, since first joining Steemit a couple weeks ago, Yet I can't seem to pull myself away from the kitchen to compose much. So, rather than fight it, I am running with the food mojo. That is obviously what I care about, so here is a bit of my food love to share.
This recipe is super easy and fast, and most importantly, Dankalicious!
It is a great way to supply your self and/or your family with a preservative-free cold meat option during these hot months. This dish is a personal favorite of my mate @quinneaker and myself.
It is also easy to make really big for large groups. I made this recipe with 3 chickens for the @gardenofeden crew, and then modified the proportions down to one chicken for nuclear families.
Yield: About 8 x 1 cup Servings
Prep time: About 20-30 minutes
Cook time: 0 minutes
INGREDIENTS:
1 Whole Rotisserie chicken (sometimes at the end of the night you can get one for cheap or free!)
1 med size yellow onion
3/4 cup chopped dried cranberries
3/4 cup chopped nuts
3/4 cup mayonnaise
1 tablespoon rosemary
1 tablespoon thyme
1 tablespoon lemon balm (or other lemon-y herb)
1 tsp black pepper
1 tablespoon vinegar
DIRECTIONS:
Pull the meat off the chicken bones in chunks.
(Set the bones and cartilage aside for making a super nutrient dense bone broth.)
Cut the chicken meat into bite sized pieces.
Chop the onions, dried cranberries, and nuts into about 1/4 inch pieces.
Use whatever nuts you like.
This recipe tastes great with almonds, pecans, or walnuts (my personal fave).
Pick, separate and chop your fresh herbs finely.
One of my favorite parts of living at the Garden of Eden is running out to gather and add FRESH ORGANIC HERBS to all my cooking!
Or, if you don't have access to fresh herbs, go ahead and use dried herbs, though you may have to use more (maybe up to double) to get the desired flavor.
Sprinkle onto the chicken all of the chopped ingredients and drizzle on the vinegar.
Mix thoroughly with the mayonnaise.
Add a little more mayo if you like it creamier.
Salt and pepper to taste.
Note: Most Rotisserie chickens are already pretty salty so taste it before you add any salt.
Chill and serve with something crunchy- like a cracker, or try using cabbage leaves for a grain free alternative!
