Cornflake Fudge Cake: No-bake treat with chocolate & cranberries

A slightly more sophisticated version of the treats you might have made as a kid (but these are still childs play!) So easy, so tasty - so why not?

Most of you probably remember those rock hard cornflake cakes that fell apart with the first bite we ate at bake sales and children birthday parties. Well, my version here gets away from those cakes of old and brings the cornflake cake bang up to date. It is still super simple to make, so it's a great one to make with children - but now, it's chewy, crunchy and fruity - what's not to love !

The combination of dried fruit being added to the cornflake cake makes for a more interesting treat; here I am using dried Cranberries, but you could pretty much any dried fruit you fancy really.

So, pop your cornflakes and fruit into a large bowl and give them a quick mix together.

Then gently heat butter, chocolate and condensed milk as this is going to make the fudge sauce that brings everything together.

Pour the hot sauce over the cornflakes and mix it all through before turning it out into a large lined Lasagna style dish and refrigerating for a good few hours to set.

Once set, I then chopped them into squares and decorated white some white chocolate - this is completely optional, or you could happily eat them as is, or decorate however you fancy!

For a batch you'll need:
225g Dark Chocolate
1 tin/397g Condensed Milk
100g Butter
100g Dried Cranberries
200g Cornflakes

I never thought of using cornflakes to bake cake. Thank goodness that I have two big packs of cornflakes in my cupboard. I'm hitting the kitchen right away to get this done.
