Time for diet…roast chicken with veggies
Ingredients: half free-range chicken cut in big pieces (I put half a chicken, but you can put the entire chicken, and adjust the ingredients you put), 3 carrots, 3 zuchinis, 3-4 potatoes, 2 tbsp of Dijon mustard, 2 lemon juices, 3 tbsp of olive oil, ½ ltr of vegetables broth, salt and pepper. Optionally -2 shredded gloves of garlic
Put the chicken pieces in a bowl along with the mustard, the olive oil, half the lemon juice and the garlic. Season well, mix everything well and let it sit for 1/2hr to 2 hrs (depending on your hunger).
Place your chicken pieces on a tray, add your vegetables - cut in pieces and seasoned, add the broth and shake the tray so that It spreads everywhere. Cover with aluminium foil and bake in 180 C for 30’. Uncover, add the rest of lemon juice, and roast for 20-30’ till it is ready.
