Barracudas ... baked!!!!
Do you like their taste? I have to admit, they are not my favourite fish, but this way of making them, was a right choice. You see, in general, I don’t like the dark meat in fish. I prefer the white- like snow - light fish which surprise-surprise doesn’t smell fishy that much! Odd? Yes, I am odd…
Ingredients: two barracudas cleaned and cut in two, 2 tomatoes cut in pieces, 3 potatos peeled and cut in pieces, 1 tbsp of chopped parsley, 1 tbsp of chopped celery, 1 onion finely cut, 2 cloves of shredded garlic, 4 tbsp of olive oil, salt and pepper
Put all your ingredients in a wide tray (if necessary cut the barracudas in two pieces), season well, add some water, cover in aluminium foil, and bake in 180C for 45’. Uncover, check if water is needed and, if so, add some, and bake for another 15-20’. Make sure your potatoes are done before taking out of the oven.
