Fried potato cheese ball. Crunchy from the outside and hot and cheesy from the inside. Served with mustard sauce

Ingredients
(14 servings 50g /ball )
Potato 325 g
Cheddar cheese 50+30 g
Mozzarella 130 g
Parmesan 50 g
Green onions 20 g
Bachamil 170 g
Flour 250 g *
Eggs 2 pcs
Panko bread crumbs 200 g *
Butter 50 g
Salt pinch
Pepper pinch
Directions
Bachamil
Heat and melt butter in sauce pan. Add the flour and stir for 2-3 mins on medium-high heat. Add milk in 3 batches slowly, continuously stirring. Add grated cheddar cheese, and stir until cheese is melted and incorporated in sauce. Cool to room temp.
Peel and grate potato. Add grated cheeses. Chop green onions once, including the greens and stem. Add bachamil. Add salt and pepper. Mix well.
Mix eggs in a bowl. Put flour in bowl. Put panko in bowl. Use ice cream scoop to shape ball. Put into flour/eggs/panko consecutively. And repeat the egg and panko again.
Heat oil to 170 C°. Fry cheese balls for 10 mins. Drain oil on paper towel.
Mustard sauce
1:3 whole grain mustard to mustard.
