Gougères au Fromage (French Cheese Puffs) or How your life might change overnight

Gougères au fromage

Ingredients:
- 4 eggs
- 25cl (1 cup) of water
- 150g (2/3 cup) of grated cheese (ideally Gruyère, but Cheddar works too!)
- 150g (2/3 cup) flour
- 80g (6 tablespoons) butter
- 1/4 teaspoon salt
- 1/4 teaspoon of freshly-ground black pepper
Utensils:
- 1 oven
- 1 pan
- 1 cheese grater
- 1 mixing bowl
Steps:
- Preheat the oven to 425F (220C).
- Heat the water, butter, salt, and pepper in a saucepan until the butter is melted.
- Dump in the flour all at once and stir vigorously until the mixture pulls away from the sides into a smooth ball. Remove from heat.
- Scrape the dough into a mixing bowl.
- Add the eggs one by one while stirring quickly.
- Add about 3/4s of the grated cheese, and stir until well-mixed.
- Using two teaspoons, put the dough into mounds, evenly-spaced apart, making each about the size of a small cherry tomato on a baking sheet with parchment paper.
- Top each puff with a bit of the remaining cheese.
- Put the baking sheet in the oven.
- Bake for 25 minutes or until they are completely golden brown.
