White chocolate mousse with strawberries
I'm Kate. I develop recipes, bake, photograph and willingly consume all of the delicious delicacies that pass through my kitchen. I am certainly not an expert, I'm completely self-taught baker, with much guidance and inspiration from my mother and grandmothers. I'm not a fancy pastry chef, I learn from trying to figure it things out, and is not a rocket science if you believe that anything is possible.

White chocolate mousse with strawberries
INGREDIENTS
200g of white chocolate
2 tsp gelatine
4 tsp boiling water
300ml of double cream
2 eggs
1 pinch of sugar
salt
METHOD
To start the dish, cover the bottom of the stainless steel rings with cling film. Add boiling water to gelatine and stir it till is even.
Melt the chocolate in a bain maire, then add water with gelatine and add to the melted chocolate. Stir until dissolved.
In a separate bowl lightly whip the cream.
Remove the bowl of melted chocolate from the heat. Separate the eggs and add the egg yolks, sugar and salt to the chocolate, stir all together and then add everything to the cream.
Whip the egg whites in another bowl until stiff, then gradually and evenly add into the chocolate mix.
Fill the rings with the mix and transfer to the fridge to set for at least 2 hours.
