Attention all foodies, unicorn lovers and parents: COLOR. CHANGING. NOODLES.

Do I have your attention yet?

A few weeks back, I randomly stumbled across a recipe for color-changing noodles on myfitnesspal and I made them the next day. Holy smokes, so adorable! Because of the ingredients, I totally thought it would affect the flavour of the noodles, but it definitely didn't! If you have children this simple preparation of the humble noodle is a sure-fire way to get kids to eat whatever is on their plate, and to have fun playing with this "interactive" food. (No real guarantee, but I sure hope it helps!)

Here's what you'll need:

A pot
Red/purple cabbage to fill the pot around 2/3 or 3/4 full
Water to the top of cabbage
Noodles
Lemon juice
1/4 TSP baking soda and 1tbs water, mixed

Keep in mind, this recipe is adjustable based on how many people you'll be feeding. More people = bigger pot, more water, more cabbage and more noodles. The choice of noodles is up to you. I used vermicelli because I like it, but experimenting with other noodles is fun too!

First, chop up your cabbage. It doesn't have to be extremely small, just in half and then 1cm slices is fine as it will all fall apart when boiled. Toss your cabbage in the pot, add water to the top of the cabbage and then boil for about 10 minutes to extract as much color as possible. Remove the cabbage from the water and toss or set aside for a stir-fry or whatever you like. You can squeeze lemon over it at this point and watch it change color!
Next, boil your noodles in your coloured cabbage-water (sans cabbage, of course). Follow the directions on the box of noodles for how long to cook them.
Once your noodles are done, drain and arrange on a plate. Drizzle lemon juice for a pink color change, and the baking soda+water mix for a green color change! I did pink and topped it with lots of coloured veggies and shrimp with homemade peanut sauce, yum!

I'll be making it again in the coming days and will definitely add more pictures and try other types of pasta/sauce combinations too. Science in the kitchen = winning.
