Cooking Oxtails Jamaican Style lol
Here I try my hands at this Jamaican classic. Known worldwide as a Sunday staple on every Jamaican dinner table, Oxtails stewed down with Butter Beans and all that spices and flavors. Oxtail is just the tail of a cow. It can be served with White Rice or Rice & Peas (Beans). This process should take an hour and a half...
Ingredients: 2 lb. of Oxtail, 1 can of broad beans, 5 cups of water, 1 onion, 2 tomatoes, 2 scallion, ½ scotch bonnet pepper, ½ lb. of carrots, 2 cloves of garlic, 2 teaspoon Jamaican browning, 4 springs of thyme, ½ teaspoon of allspice, ½ teaspoon seasoning salt, ½ teaspoon salt, ½ teaspoon black pepper, 1 tablespoon oil, 1 oz. vinegar and a pressure cooker for less cooking time.
First, chop the scallion, scotch bonnet pepper, garlic, onion, tomato, carrot, and thyme. Next, trim the extra fat from the meat if there is any. Wash oxtails in cold water/vinegar solution.
Season the oxtails with 1/2 teaspoon of all spice, ½ teaspoon seasoning salt, ½ teaspoon salt, and ½ teaspoon black pepper. Fry the oxtails and seasoning in a tablespoon of oil for about 10 minutes or until brown.
Put the oxtails in the pressure cooker with the browning and salt. Add the 5 cups of water to the pot and place the pot on the fire, with the fire on high. Allow the meat to pressure for about 45 minutes, by this time pressure of the pot should start to build up to its maximum point. Turn off the fire and wait for the pressure to reduce (Do not remove the pot cover if the pressure is still high).
Now that the pot is cool enough, carefully remove the cover and pour the meat into a saucepan. Add the chopped scallion, scotch bonnet pepper, garlic, onion, tomatoes, carrots, and thyme then turn the fire to medium. Cook the oxtails until they are soft. Taste the gravy and add salt to taste if needed, add the butter beans two minutes before you are finish making this stew.
In addition, as I said before... You may serve it with White Rice or Rice & Peas (Beans) or even with Dumplings but that is another process of making flour dumplings the Jamaican way lol...
