Rice, Meat Patty, Wet Egg - Oh My !


If you have ventured anywhere in the world this dish has many names but I like the name I know it for and its called "Loco Mocho". The dish looks easy to make but there is a few ground rules that must be mastered in order to call this dish called LOCO MOCHO. LOCO MOCHO boasts an extremely delicious gravy that must absorb the meat juice and the finely grounded coffee beans of your choice. The patty, is composed up of either grounded pork or beef coupled with minced garlic, red onions, salt, pepper, and brown sugar. Finally to top it off, it must have an egg served on top of the meat patty and the egg must be cooked sunny side up either fully cooked or poached, but the yoke must still be intact for it to be complete.

Let me show you How I did it, and hopefully you can make your own version:

  1. I used grounded pork, not lean pork, but grounded pork, mixed with minced garlic and red onion, salt, pepper, and brown sugar. Pact nicely and mixed thoroughly.

2)Then Sear on both sides 1 minute each, cut a clove of garlic in half and some left over red onion so the vegetable oils absorb the flavors to infuse with the patty while it is cooking.

After searing both sides, place the pattys onto a foil sheet and bake in the oven at 350 degrees Fahrenheit for 10 minutes, than let it rest.

3)Cook rice. Short or Long grain doesn't matter.

4)Poach an Egg or Fry. In this case I poached it so I can get the egg cooked while maintaining the yoke. However I messed up, and I think frying the egg is what i should have done, since I'm more used to frying an egg.

5)Lets make gravy - 1 cup of millk mixed with corstarch; set this aside, mix 2 cups beef stock bring to heat, In a frying pan or a pot, place the stock first, then the milk mixture, add 5 splashes of worchesister sauce and some black pepper, cook till sauce is thick and reduce.

6)Assemble the ingredients - Take some rice, use a small cup to shape it, and place the pattys on the shaped rice. Placed the egg on top of the patty and pour on the gravy.

There you have it, you're own Loco Mocho.

A couple of notes:

  • The stronger the coffee beans the better, the caffeine is what gives the Loco the name for this dish
  • The Coffee Beans must be grounded almost to a fine crush, but not to fine, I recommend mortar and pestle not machine tools, if the coffee beans are not grounded properly, you'll have more of a bitter tasting patty, the brown sugar can only help so much. But the caffeine will be abosrbed by the patty easier if its grounded properly.
  • The Gravy, must stand out, and not be watered down. Put effort into that gravy and don't hesitate to use all the beef juice in it.
  • Everything about this dish needs to stand out in flavor, if not, all you have is a burger steak, nothing more. This dish is all about the coffee flavor and the sensation of the meat patty and gravy.
