Hummus

Last week we posted our Pesto recipe and talked about how important is to plan your meals to avoid falling out of the healthy eating wagon.

Hummus is a recipe that can be part of a meal, a dip or a spread. It is nutritive, healthy and delicious. It is a great meal to add legumes to your diet and it is affordable. PLUS most of the ingredients here will also be handy for other recipes as Baba Ganoush or Tahini Salad Dressing.

Ingredients

  • 400 grams of Chickpeas
  • 300 ml of Olive Oil
  • 200 ml of Water same broth that is used to boil the chickpeas
  • 2 Garlic cloves
  • The juice of 1 Lemon
  • 2 tbs of Tahini sesame paste
  • 1/2 tsp of Salt
  • 1/2 tsp of Pepper
  • Sesame seeds decoration

Directions

  • Start by letting the raw chickpeas soak overnight, as long as they soak, quicker they will cook.
  • Next morning, rinse them and with new, fresh water boil them until soft.
  • Get every ingredient ready and add them to a food processor or a Blender.
  • First, add the cooked chickpeas and the broth, then add Olive oil and lemon juice. Then continue by adding Garlic and Tahini.
  • Try it out, and according to your preferences add Salt and Pepper, less or more than 1/2 tsp, up to you.
  • Let the blender run for around 2 minutes, until smooth.
  • Serve, and add some sesame seeds and olive oil on top for decoration.

Notes

  • Start by adding the main ingredient + the liquid ingredients will help the blender to do its job.
  • The mixing time will depend on how smooth or crunchy you want your Hummus to be.
  • We use the blender for this recipe.
  • To cook, we always recommend Pink Mountain Salt as my number one and on the second place Sea Salt.
  • Depending on how thick you want your Hummus to be, you can add more Olive Oil, Broth or Lemon / Lime juice.
  • This recipe is very traditional, but Hummus is very versatile, so adding species as cumin or paprika it is also a great idea.
  • Coriander and Persely are fantastic greens options as garnish and to boost the flavour.
  • Products will always vary depending on your geographical location and season, but in our experience, those resources are mostly available everywhere.
  • Canned Chickpeas are "okay", just keep in mind that they are already processed food. At @soulsandsister we will always recommend the raw ingredient and wholemeal products.
