Simple recipes: Overnight stuffed tortillas
Hello and welcome to another Steemit post from Simple Recipes today I will be writing about my take on Ham stuffed tortillas. This simple yet quite tasty recipe is a favorite of mine to prepare ahead and have it ready to be made at anytime.

Ingredients
- 2 1/2 cups smoked ham, chopped small
- 1 cup diced green onions
- 2 1/2 cups of diced vegetables (Onions, Green&red bell peppers, Spinach, Shredded carrots, Sliced mushrooms)
- 3 cups shredded cheddar cheese, 1/2 cup mozzarella
- 24 small flour tortillas
- 2 cups half-and-half cream
- 12 eggs
- 1 teaspoon of each salt, pepper, paprika, Cajun, thyme.
- 4 tablespoon flour
- salsa, sour cream, and extra green onions or cilantro for serving
- 1/2 cup olive oil
Method
- Coat a deep baking pan with butter , oil or non-stick cooking spray.
- In a cooking pan add the olive oil then add all the vegetables and saute for 3 minutes then place them in the deep baking pan.
- Mix the smoked ham, green onions and 2 1/2 cups of cheese in a bowl. Whisk together the half-and-half, eggs, salt, and flour until smooth. Spread the tortillas on the deep baking pan. Scoop 1/3 cup of the cheese mixture onto each tortilla; roll up and place them on the top of the mixed vegetables.
- Pour the mixture over the tortillas. Cover and refrigerate overnight for best results.
- Preheat oven when you want to prepare it to 350.
- Cover the baking pan with aluminum foil for about 30 minutes. Remove foil and sprinkle remaining cheese over tortillas. Bake for another 10 minutes until it is golden brown. Serve hot with salsa, sour cream or any dressing you like.
