Museli Slice

The one saucepan muesli slice..........

It's a race to have the first slice of this little beauty!

Here's all you need:

125 g butter
1/4 cup brown sugar (I use raw organic coconut sugar)
2 tbs honey
1 1/2 cups rolled oats
1/2 cup self-raising flour
1 1/2 cups of dried fruit (I use sultanas or cranberries, dried apricots and dates)
1/3 cup desiccated coconut

Optional: sesame seeds, sunflower seeds and pepitas

Here's what you do:

Preheat oven to 160C. Grease and line 20cm baking tray, leaving an overhang of baking paper.

Melt butter and sugar in a saucepan over medium heat until sugar dissolves. Remove from heat and all other ingredients until well combined.

Press mixture into the greased tray quite firmly. Bake for 30 minutes or until golden.

Allow slice to cool in the tray before removing and cutting into bite-size snacks.
