Mapo Tofu
Dear Steemit friends:
Today I share with you the famous traditional dish of Sichuan, China: Mapo Tofu.
Mapo tofu is now well-known overseas, It is very popular among people in the United States, Canada, the United Kingdom, France, Vietnam, Singapore, Malaysia, Japan, Australia, etc. It has become an international famous dish; please refer to the production method.
Ingredients:
1: tofu (500 g); 2: beef (15-20 g); 3:black pepper (5 g); 4: red pepper sauce (15 g);
5: soy sauce (10 g); 6: shallot (3-4 g); 7: salt (8-12 g); 8: white pepper powder (2-4 g);
9: corn starch (2-3 g); 10: vegetable oil (25-30 g).
Step:
1: Add some salt to the water and mix well;
2: Cut the tofu into squares with a knife, then soak in salt water (10-15 minutes), remove and drain the water;
3: Pour the vegetable oil into the pot and heat it up to 50%, then add the minced beef and stir fry for 2 minutes, then take it out and wait for use;
4: Heat the pan to 30%, then add the black pepper , stir fry for 1 minute, then remove and crush;
5: Pour the vegetable oil into the pot and heat it up to 40%, then add the red oil chili sauce and stir fry for 1 minute, then add the water, soy sauce and salt to boil;
6: Then add tofu, beef, white pepper, cornstarch and shallot in the pot and cook over medium heat for 5-8 minutes;
7: Finally sprinkle the black pepper powder on the top of the tofu.

Precautions:
1: After the tofu is cut, it must be soaked in salt water for 10-15 minutes, so that the taste of tofu will be better;
2: no vegetable oil is added to the pot when fried black pepper;
3: when fried red pepper sauce Be sure to use a small fire;
