FISH TO THE VIZCAINA
INGREDIENTS
A large loin of salted cod.
Two roasted peppers (better if they are choriceros peppers)
A big tomato
A large onion
Three cloves of garlic
Extra virgin olive oil
A spoonful of flour.
PREPARATION
We started having the fish soak from the previous day to desalt it. Change the water several times.
The next day, put the fish in the pan with cold water and when it starts to boil, remove it from the heat. Onion and tomatoes chop very thin and peppers in larger pieces. Laminate the garlic.
Brown the onion with olive oil in a pan. When they acquire a golden color, add the tomato, pepper and garlic and let them cook. Once done, add a little water and flour. It is stirred and when the sauce has a thick consistency the fish is added, putting the sauce on top so that it acquires the flavor. And in a few minutes it is served.
