There is a town called OFADA in one of Nigeria State(Ogun State). This is a place where heritage variety of rice is grown and to this fact it is named after the city. OFADA RICE
Also this rice is grown is eastern Nigeria at Abakaliki therefore they call it Abakaliki Rice
Sometime we called this rice Brown Rice because it is Nigerian unpolished rice that is non-genetically modified.
This rice is of two types:
- Brown Rice: very highly aromatic
- White Rice: not aromatic

# Process
Pick out the stones and dirt from the rice
Thereafter pour the rice into a bowl and wash repeatedly. Because the water will be so dirty.

Make sure you Rinse till the water runs clean…
Add measured cups of water and allow to cook on low to medium heat for about 12minutes
Please note your pot cover must remain open throughout
Rinse out the starch after taking out off from the heat till the water runs clean.
Finally add 1cup of water and start cooking till the rice soft. After the rice is fully cooked drain out in a colander.

The first one is called AYAMASE
Second is called OBE ATA DINDIN WITH IRU
Ofara rice has ways of serving it.
It is wrapped in leaves due to the fact that the leaves has Phytoconstituents, and this therefore impacts some particular characteristic taste into foods associated with. it also added sweeteners into the food because it is richly endowed in essential oils.
