Comforting Chicken and Vegetable Soup!

Hello Steemit! Happy New Year! I am unfortunately ringing in the new year with a bit of a cold. So plenty of hot tea and homemade soup was much needed! I decided to document my favorite comforting chicken and vegetable soup recipe for you guys. I have made this soup with dumplings before, but decided this time that I just needed that warm aromatic soup all by itself. I hope you enjoy!

I like to make my soup without any store bought broths, stocks, or bullion cubes. I also prefer to use bone-in chicken thighs. I like the dark meat and the flavor it provides.

Here I have 6 chicken thighs in a pot of water with bay leaves and some thyme. I try to use fresh thyme sprigs when I can but did not have any available. Most of the dried thyme will get removed as I skim the grease and foam off of the top as the chicken cooks. I poached the chicken for 25-30 minutes until done.

Meanwhile, I worked on chopping my vegetables. I used onion, celery, carrots, and some chopped garlic. Pretty common staples in a chicken soup.

Also, to showcase one of my Christmas gifts, I got a nifty garbage bowl! Perfect for all my peels and carrot butts!

By the time all of my vegetables were chopped, the chicken was ready to remove from the pot to cool!

I add more water to the pot as needed and dump in all the vegetables to let them flavor the broth as I shred my chicken. The aroma is amazing!

All of my chicken shredded and pulled from the bones. (which my garbage bowl was also handy for)

Time to dump it in the pot! I then add my seasonings... which some may say is rather excessive, but I love the way my soup turns out! I'm sorry that I don't have exact measurements because I add and taste constantly.

Some of the spices that I use are italian seasoning, rosemary, thyme, paprika, salt and pepper, dill weed, garlic powder, and cayenne pepper.

Then I let the soup simmer until the broth reduces about half an inch.

The paprika and cayenne give it an amazing color!

And voila! An amazing, healthy, comforting soup!!!

@ sallyswitchblade thank you for sharing this recipe. We eat a lot of chicken in our house and because of this we have a lot of homemade chicken soup to. I will never throw the carcass away after a roast and therefore with my fingers will salvage every tiny morsel of chicken meat left on the bones which I will put into a pot with vegetables to make a broth. This is always eaten with crusty bread, oh and leeks. I got to have leeks in my soup. These images have my mouth watering, and I'm gutted cos we we have no leftover chicken from New Years dinner... yay but I do have turkey.. now where are those leeks. Take care @racykacy

Haha! Thank you for checking out my recipe! Turkey would also be amazing! I don't think I have ever had leeks before, but am always eager to try new things! I always eyeball them at the grocery store, but don't really know what to do with them! Something I will have to look into!

This sounds so amazing! We tried to make some the other night but weren't really successful with it (we were totally winging it). Lol. Next time I'm going to have to try it this way. Thanks for sharing your amazing recipe! :)

I am starting to feel a little better, however my nose won't stop running. Make sure you taste often for seasoning! I do have to add quite a bit of salt since I don't use a broth or stock. I have been making it this way since the first time I made it. I had a bunch of chicken thighs in the freezer and some veggies in the crisper but no stock or broth and didn't want to run to the store! Keep at it! The wonderful thing about soups is that there are so many different ways to make them!

This is a great standard veggie soup recipe. You can literally put whatever you have in it. I'd probably sub out the water for Veggie "stock" in order to add a bit more depth of flavor.
