Wow this sounds delicious! I was about to respond asking if this goes with rice but then got to the end of your post. I'm more a tempeh fan than I am of regular tofu. Well, really it's just easier to cook. I'm not vegan but I usually cook vegan so that friends can eat it too.
Hey @robmolecule, thanks for stopping by. Yes, adding rice helps round this dish out. Another nice thing about it is that the stew tastes sweet even though it doesn't have any sugar in it. And I agree with you: tempeh rules :)
