Soup for the soul; just like mom made
My daughter and I made soup using a turkey carcass and a few basic veggies. It was super yummy great way to use left overs from the holidays and healthy.
We put the turkey bones in a large pot with enough water to cover. The pot was brought to a boil then simmered for about an hour for a rich stock.
Meanwhile, we chopped these veggies; Celery, Carrot , Onion, Parsley, Green peas, Tomato. Potato can also be added. We opted for noodles.
Once the turkey pot is ready, use a colander over a second pot to strain the stock. Through the veggies in and bring to a boil. Lower to medium heat and cook until the veggies are tender. Taste for salt and pepper. In a separate pot we made our favourite noodles.
A big scoop of noodles in my bowl, stock with veggies and I like Parmesan cheese with a little extra pepper. Ready!!
