We all know Halloween is not far away, so I decided to give you guys, one of the best recepies for a tasty vegan pumkin soup.

1.First you need to heat eat the oil in pot over medium heat and after that you musst add some onion and cook for a few minutes until translucent. Add some pumpkin and garlic and continue to cook for a few more minutes.
2.After you did that add some rosemary and vegetable broth. Bring to a boil, reduce the heat to a low and simmer until the pumpkin is soft and cooked through and some salt if you wish.
3.Puree the soup in a blender and return to the pot.
4. Add some coconut milk and simmer for another minute or two.
5.Serve garnished with toasted sliced almonds, a drizzle of olive oil and fresh rosemary.
Ingredient
tablespoon olive oil
1/2 onion
1/2 pumpkin, peeled and diced
4 cloves garlic
1 tablespoon fresh rosemary
4-5 cups vegetable broth
1/2-1 cup coconut milk
For garnish: 1/4 cup toasted sliced almonds
