After a long Tet holiday I decided to eat healthier :)
Day 1, Breakfast
What's your favorite breakfast menu? My favorite breakfast these days is overnight oats. Honestly, I wasn't a big fan of oats until I found out overnight oats recipes ;) It's SO easy to make and taste so much better than warm oats! I like it because it's cold since I'm living in a hot country. I like to eat overnight oats with a little bit of fruits and fresh coconut water. Did you know you can get fresh coconut everywhere in Vietnam? :) It's about $1 and it's soooo refreshing!
Day 1, Dinenr
For dinner I made Vietnamese style of lemongrass chicken and stir-fried morning glory. I don't know many Vietnamese food recipe so I'd love to research and learn more Vietnamese cuisine.
Day 2, Breakfast
I make Tofu-rice which North Korean cuisine for dinner. I actually haven't had tofu rice at a restaurant. One day I saw this dish from documentary about N/K and I decided to make it :) I heard this is no.1 popular snack for North Koreans. I wish I could try the real tofu rice in North Korea one day ;) It taste soooo good also taste so healthy!
Day 2, Dinner
This doesn't look the best but taste amazing haha. Simple and easy and healthy dinner. Left over chicken steak and bunch of steamed veggies ;)
**Day 3, Breakfast **
This is also one of my favorite breakfast. Korean style avocado Bibimbab :) Brown rice, eggs, and avocado with a little bit of soy sauce & sesame oil. It's so easy and tasty!! Try make these :)
**Day 3, Dinner **
Every time I have a lot of leftover veggies I make pasta hehe. I can add any veggies left in my fridge :) Also don't forget to put a lot of cheese at the end ;) This is not really healthy meal but you need cheating day once a week... or twice... or bunch of times hehe.
