Cooking Tacos al Pastor
After you've marinated your meat for Tacos al Pastor for 8-12 hours you are ready to cook the meat. If you are just doing a smaller batch of 2 pounds or less, you can use a 8-10" skillet with a lid. For a larger batch, you can use a crock pot on low for 8 hours.
Remove the meat and all the juices into the skillet and cover. Bring the meat to a simmer slowly, and then continue to simmer the meat for 4 hours on low. Do not remove the lid at any time or this will increase the cooking time.
Preparing Tacos al Pastor
- Corn Tortillas
- Sour cream
- Onion
- Cilantro
- Lime (optional)
- Meat (obviously)
Toast your tortillas in the toaster oven until warm and soft. I recommend using 2 tortillas per taco so they dont get soggy and fall apart. Stack the tortillas by 2's and then spread sour cream, meat, avocado, cilantro and onion on top.
Enjoy Your Tacos
Yes if you've been following along you now have some awesome tacos to enjoy. Top the tacos with a fresh squirt of lime, hot sauce, or some of the leftover pineapple concentrate. You may also like a side of refried beans or rice to go with your meal.
