Turkish phyllo spinach pastry (ıspanaklı gül börek)
I love spinach. I love cheese. You like that if you are thinking like me.The baked pie pieces are delicious..
The filling is spinach and cheese. It was so good.
My guests are always impressed with this dish even though it's actually very simple to make!
Ingredients
4 sheets phyllo pastry or dough (turkis name is yufka) like this
2 Tbsp olive oil
1 large onion, finely chopped
4 scallions, finely chopped
2 pounds fresh spinach, coarsely chopped
4 large eggs
8 ounces feta cheese,
2 Tbsp cheese
1/2 tsp salt
several grinds of black pepper
8 Tbsp butter, melted
In a large skillet over medium heat, heat the olive oil until shimmering.
Add the onion and scallions, cooking until softened.
Add the spinach, one handful at a time, and cook until it is all fully wilted and the liquid has been released. Turn the heat up to high and cook until the liquid has evaporated and the spinach is dry.Remove from heat.
Let the spinach mixture cool until you can handle it.and add to the cheese and mix.I used spinach and feta cheese filling but you can use whatever you want.The end result is simply delicious.
Lay out one sheet of phyllo dough, and using a pastry brush, gently brush a light layer of olive oil evenly on one side. Add 2 more sheets, lightly brushing each layer with some of the olive oil.
Spread of the spinach mixture along one short side of the phyllo pile. Fold in the long sides, then roll up to create a log. Place seam side down on baking sheet.
Place in oven, and bake until golden brown, about 20-25 min. Let cool for 5 minutes before serving..
