RECIPE - "Vegan Aubergine Gratin"
Hey, everybody, how you doing? You know I usually cook healthy recipes, but now we've decided at home to go a step further and go on a vegan diet. Nowadays there are many alternatives and with a little bit of ingenuity you can make lifelong straight, like these eggplant gratin.
INGREDIENTS
2 Aubergines
Tomato sauce
1 onion
100gr of textured soya
Vegan grated cheese
PREPARATION
We cut the aubergines in half and with the help of a spoon we empty it little by little, and we keep the skins to fill them later.
We cut the aubergine that we have taken out in small pieces and the onion also we cut it.
In a pan add a little oil, onion, eggplant and textured soy and sauté 2 minutes, then add 150ml of water and let it cook over medium heat until the water has evaporated.
Add the tomato sauce and cook for another 3 or 4 minutes.
Then we stuff the eggplant and add the grated cheese and put it in the oven for 5-10 minutes so that it melts and it's ready, to enjoy.
