I am doing Weight Watchers so the [PP+] below refers to the PointsPlus Plan. The tracking software is an app iTrackBites.
I love this quick and easy dish inspired by Gina at Skinnytaste. I have a lot of Points+ to use during the day and need to average about 10-15 per meal in order to meet my daily caloric guidelines so I add things that others with less weight to lose can certainly edit or leave off if they need less points.
Make it lighter by:
- Grilling the chicken - or baking with no breading on chicken [-2.9PP]
- No Sour Cream [-1.1PP]
- Salad without all the pointy stuff (pepitas, currants, corn, buttermilk dressing) [-3.5PP]
- Use Fat Free Mozzarella [-1.1PP]
THIS WOULD MAKE IT [7.9PP+]
So easy... just breadcrumb your chicken breasts, cook on 350° for 25min (for 8oz), add marinara and cheese, cook another 5 min and you're done! The original recipe calls for 450° but several commenters noted it was too high a heat and I have always done it on the lower temp with great results.
