Summer Runner Beans with Bacon! (FOOD PHOTO SHOOT)

Its during these sweet summer months that we get to eat the best of seasonal vegetables, fresh from the garden. One of the most productive garden crops are Runner Beans.
Juicy, sweet and fresh. Runner beans are super healthy as you get both the beans and the greens- so the full package of protein, vitamins and minerals.

They are one of the longest cropping vegetables in the garden as the more you pick them, the more they grow. As yummy as they are boiled with butter, when you eat them every day they can get boring. So its important to have a variety of recipes in order to keep them interesting.

The first thing you want to do is get rid of the tough strings, that form along the edge of the beans as they get larger. You can do this with a knife or a potato peeler. Just top and tail and run the peeler up and down the sides a few times, then slice thinly for nice tender beans.

Now its time for the Bacon! I'm using some nice smoked streaky, cut it up fine into strips or squares and fry in a little oil until crispy and golden all over. Then remove the bacon but leave the fat in the pan because we dont want to waste that good stuff.

Finely chop half a small onion and one or two garlic cloves depending on size. Then add to the pan with the bacon fat. Soften over a low heat for a few minutes until its cooked down, and a nice golden colour but not brown.

Boil up the beans in a large pan of salted water for about 6 minutes until tender, then drain. Add the beans in with the onion and garlic, along with 3/4 of the crispy bacon and stir together with a sqeeze of lemon and a few grinds of pepper.

Dish out onto plates and grate on a bit of Cheddar or Parmesan cheese. Sprinkle the last 1/4 of the bacon over the top, a bit more pepper and serve with a wedge of lemon. The flavours and colours are so vibrant its a real treat to the senses! ENJOY :)
